Process of Kabuli Chana (Chick peas, Garbanzo beans, Safed Chana, Chole)
Kabuli chana, also known as chick peas or Garbanzo beans is a nutritious legume and is used to make a variety of delicacies such as the Punjabi chole or a health dip like hummus. Kabuli chana is an excellent source of nutrients such as phosphorus, iron, copper and proteins. The high fibre content in this dal helps cure stomach disorders and constipation.

This legume is hard and knobby in shape and is beige in colour. It resembles a wrinkled hazelnut. Kabuli chana has a nutty and creamy flavor and a firm texture and it has a very low fat content.

Kabuli chana is good for the heart and reduces the levels of cholesterol in the body. Regular intake in moderate proportions prevents heart disease, strokes and strengthens the muscles of the heart. Kabuli chana is cholesterol free and sugar free. The nutrients in kabuli chana have antioxidant effects and help prevent certain ailments such as breast cancer and the development of arthritis. This dal is a good source of protein for vegetarians and it is low in calories.

Kabuli chana is processed from raw chick peas which is cultivated under professional supervision. Modern technology is used to clean and process the raw chick peas so that the product conforms to health standards. Packaging is done using premium quality, food grade material to ensure a longer shelf life of the pulses and to preserve its nutrients. The technology used for processing and packaging the kabuli chana also ensures that the dal is free from any form of contamination. It can be stored in the refrigerator for a year in its original sealed package so that the colour, flavour and nutrients in the dal remain intact. We offer kabuli chana to our customers in bulk packs of 30 kg or smaller consumer packs of ½ kg, 1 kg and 5 kg.

Kabuli chana should be soaked overnight before cooking. After soaking it will turn to double times its original size. It can be pressure cooked with salt and water till tender before adding other ingredients. It can be added to soups, salads, vegetables and chaats, though the most popular dish with this legume is “chole”.

Kabuli Chana Recipes  
Ingredients
100 gms kabuli chana
1/4 tsp coriander powder (dhania)
1/4 tsp cumin seeds powder (jeera)
1 tsp sliced ginger (adrak)
1/2 tsp crushed garlic (lehsun)
1/4 cup grated onions
1/4 cup tomato puree
1/4 cup chopped coriander leaves (dhania)
1/4 tsp garam masala
A pinch of turmeric powder (haldi)

Salt to taste
Sliced onions for garnish
Sliced tomatoes for garnish
Chopped green chillies for garnish
  Instructions
1. Soak the kabuli chana in water for 8 to 10 hours.

2. Add salt and cook for 5 to 6 whistles or till cooked.

3. Heat the pan, add cumin seeds and roast its till golden brown.

4. Add coriander powder, turmeric powder and saute for 10 seconds.

5. Add onions, tomato puree, ginger, garlic, chilli powder and remaining water, now pressure cook for 10 minutes.

6. Simmer it and open the lid and become the mixture dry.

7. Add cooked chana along with the preserved water and simmer for 10 minutes.

8. Add garam masala and chopped coriander, mix well and cook till the gravy thickens.

9. Garnish with green chilies, sliced onions and sliced tomatoes.

Serving suggestions – Serve it with rice. You can serve with any Indian flat bread like naan, paratha, roti.

Chole Chaat  
 

Ingredients:

  • 1 cup chole soaked overnight and drained
  • 1 tea bag
  • 2 medium sized onions finely chopped
  • ½ tsp jeera
  • ½ tsp finely chopped ginger
  • 5 cloves of chopped garlic
  • 1 tsp chilli powder
  • 1 tsp aamchur
  • ½ tsp haldi powder
  • 2 tsps dhania powder
  • 1 tsp jeera powder
  • 2 tsp chole masala
  • Chopped coriander

Method:

  • Pressure cook the kabuli chana with the tea bag, salt and enough water
  • Drain after cooking and keep aside after discarding the tea bag
  • Heat oil in a deep pan and splutter the jeera seeds
  • Add the garlic and onions and sauté
  • Add the powdered masalas with a cup of water and cook gently
  • Add the boiled kabuli chana and cook till the spices are well blended
  • Garnish with coriander leaves and serve hot.
Kabuli chana is used to make other dishes such as hummus, chana paneer, chickpea soup, kabuli chana and soya tikkis, dal pinni which is a Jain dish, falafel which is a Lebanese dish and even delicious and tangy pickles.
