Process of Malka Masur (Lentil Dal, Pink Lentil)
Pink Masur dal is processed from black masur lentils from which the skin is removed and the grains are then split. Malka masur dal is popularly used in Indian cuisine because of its high nutritional value, its flavor and ease in cooking.

This lentil is extremely rich in soluble fibers and lowers blood cholesterol levels and also reduces the risk of strokes and other heart problems. Red masur dal has antioxidant properties which reduces the risk of cancer and benefits those suffering from blood-sugar. This lentil is low in calories and it also increases energy levels, as it contains iron and a high level of proteins. It is beneficial to those who suffer from iron deficiencies and during pregnancy.

Masur dal has a mild nutty flavor and a pinkish red colour but, when boiled it turns pale yellow. It cooks fast so it is not necessary to soak this lentil for long, before cooking. In some Indian homes, red masur dal is cooked daily in different ways, for its nutritional properties. This lentil can be used to make soups, dal tadkas, parathas and even khichdi. Different regions of India have their own special recipe with various ingredients and spices, to cook this dal.

Whole Masoor Recipes  
Whole Lentils (Masoor Sabut) - 1 cup
Water - 2.5 - 3 cup
Turmeric - 1 tsp.
Salt to taste
Red Chili powder - 1/2 tsp.
Green Chili - 1 Chopped

Oil - 2 teaspoons
Cumin seeds - 1 teaspoon
Garam Masala - 1/2 tsp
Cloves - 3
Ginger Garlic Paste - 1tsp.
Red onion (Chopped) - 1 medium
Tomatoes - 2 Chopped
Generous dash of Garam masala
Curry powder

1. Wash lentils and drain.

2. Soak the lentils for 15-20 minutes.

3. Add Lentils in a deep pan with water

4. Add salt (cook on low-medium heat for 15-20 minutes)

1. Add oil in a small pan (medium heat)

2. Add cimin seeds & fry.

3. Now add chopped onions. Fry until its get brown.

4. Add Ginger - Garlic Paste and fry for a minute.

5. Add tomatoes & mix it.

6. Add Green chili (fry for a minute or until tomatoes get soft)

7. Add All dry powders (Add Garam masala and Kasuri methi later)

8. Now add this mixture in boiled dal

9. Mix it well with spoon

10. Now add garam masala & Kasuri methi

11. Add coriander leaves for garnish.
Masoor Dal Recipes  
Pink Lentils (Masoor Dal) - 1/2 cup
Water - 1.5 cup (2 cups for thinner consistency)
Turmeric - 1/4 teaspoon
Salt to taste

Oil - 2 teaspoons
Cumin seeds - 1/2 teaspoon
1/2 Serrano chili pepper (to taste)
Cloves - 3 (Garlic thinly sliced)
Red onion (Chopped) - 3-4 Tablespoons
Generous dash of Garam masala
Curry powder
1. Wash Pink lentils and drain

2. Add Lentils in a deep pan with 1.5 cups of water

3. Add salt and turmeric (cook on low-medium heat for 15-20 minutes)

1. Add oil in a small pan (medium heat)

2. Add cumin seeds (cook for a few seconds and get fragrant)

3. Add garlic and chili (until its get golden brown)

4. Add onion (until translucent)

5. Add the hot tempering to the cooked lentils.

6. Add Garam Masala and mix.

Adjust salt and spice.
Masur Dal and Paneer Soup  
¼ cup masur dal which has been washed and drained
¼ cup paneer
Two large tomatoes, chopped
2 medium sized onions, finely sliced
Three cloves of crushed garlic
1 tsp cooking oil
A pinch of chilli powder
Salt to taste


  • Sauté the onions in oil in a pressure cooker on medium flame.
  • Add the crushed garlic and chilli powder and sauté for a minute.
  • Add the tomatoes and dal with two cups of water and steam in the cooker.
  • Once cooked remove from pressure cooker and cool
  • Blend the dal and vegetables into a smooth puree in a mixer.
  • Transfer the puree to a non stick pan and add salt and mix well.
  • Bring to a boil and simmer.
  • Add cubed paneer and two tsps of lemon juice and serve hot in soup bowls.

This is a very nutritious, protein rich soup with a tangy flavor and is quite easy to make. This soup is nourishing and very tasty and would be quite popular on a cold day. Other recipes with masoor dal include masoor dal tadka, masoor dal pakodas, masoor dal parathas and other varieties of tasty cuisine.
