Process of Urad Dal (Black Gram Whole/Split/Skinned - Urad Sabut/Chilka/Dhuli)
Urad dal is processed from raw black gram (black lentils). Urad dal is used in different forms. The processed black gram known as “Urad Sabut” is used in its entirety in some dishes. The unskinned whole grains are white in colour and are known as “Urad Dhuli” or “Mah Dhuli”. A third variety after processing the black gram is the split gram known as “Urad Chilka” or Split Urad dal which retains the skin and has a strong flavour. Skinned and split Urad dal is creamy white in colour and is rather bland in taste. All these varieties are used in a variety of dishes especially in the Indian kitchen.

Urad dal is high in folic acid and is low in cholesterol and sugar and this makes it a healthy option for a day’s menu.
This dal is widely cultivated in India due to its many health properties. It is known to boost the immune system and is also used in Ayurveda system of medicine. We process the Urad dal using the latest technology and offer all the varieties of the dal in hygienically sealed packages. The cleaning, processing and packaging of the dals is done under strict supervision to maintain its high quality. Punjabi Urad Dal Recipes (2 Servings)
Ingredients
Urad dal – 1 cup
Water – 5 cups
Salt – to taste
Ginger paste – 1 teaspoon
Garlic paste – 1 teaspoon
Oil – ½ cup
Onion – 1 Medium, chopped
Green chilie Paste – 1 Teaspoon
Tomatoes – 1 Medium, chopped

Turmeric powder – 1 teaspoon
Coriander powder – 1 teaspoon
Garam masala – 1 teaspoon
Cumin seeds – 1 teaspoon
Hing Powder (Asafetida) - 2 Pinch

Garnish
Finely chopped coriender leaves - 2 Tablespoon
  Instructions
1. Boil Dal with 5 Cup of water with salt.

2. Stir occassionally and if white foam gathering on top, remove it.

3. Remove the pan from when when it ready.

4. Add oil in pan and heat it, now add hing, cumin seeds, heat it until its crackling.

5. Add Onion and fry it until its turns golden brown.

6. Now Add Green Chili Paste and Ginger Garlic Paste and mix it. (for about 1 min.)

7. Add all dry spices and stir for 1 min.

8. Add Tomatos and mix and add 2 tablespoon of water and heat it until its leaves oil.

9. Add Dal into this mixture and also add some water and make it boil.

10. Add extra water if needed & let it boil.

11. Serve it on a dish and garnish with coriender leaves.

Shelf life – It can be refrigerated once cool completely in air tight container up to 4-5 days or even you can freeze it.

Serving suggestions – Serve it with rice. You can serve with any Indian flat bread like naan, paratha, roti.

Tips
- You can adjust the consistency of dal. If dal is too thick then add some water and let it boil for 2 minutes.
- If dal is too thin then let it boil for some more time till it thickens.

Sookhi (dry) Urad Dal  
 

Ingredients:

  • 1 cup white sabut urad dal
  • 1 onion chopped
  • 1 tomato cubed
  • 1 tsp grated ginger
  • 1 chopped green chilli
  • Some chopped coriander leaves
  • 1 tsp jeera whole
  • 2 cloves
  • Two bay leaves
  • 2 tsps lemon juice
  • ½ tsp turmeric powder
  • ½ tsp chilli powder
  • ¼ tsp garam masala
  • Salt to taste
  • 2 tbsps oil

Method:

  • Soak the dal for half an hour and wash
  • Boil the dal till soft but not pasty
  • Drain the dal and keep aside
  • In a pan add oil and heat
  • Add bay leaves, cloves and jeera and allow to splutter
  • Add ginger, onion and green chilli and sauté
  • Add tomatoes and cook till soft
  • Now add the dry spices and cook for a minute
  • Add the dal and the lemon juice and stir gently till the spices are well blended
  • Pour into a serving dish and garnish with coriander leaves.
  • Serve hot with chapattis
Urad dal can also be used to make chutneys, cutlets, dosas, vadas, idlis, papads, kachoris and various other dishes.
